Chef Loi is a World Pastry Champion and the co-founder of Voilà Patisserie in Kuala Lumpur. He trained in French pastry but draws deep inspiration from Asian flavours and childhood memories. Renowned for his sculpting finesse and creative frozen desserts, his work bridges tradition and modernity with emotional depth.
The three-day masterclass with Chef Loi Ming Ai concluded with an inspiring exploration of technique, precision, and refined execution. Over the course of the sessions, Chef Loi shared his expertise and approach, guiding participants through the use of precise emulsifiers, balanced stabilisers, elegant gélifiants, and delicate infusions.
