Mohamed Al-Matin is the visionary founder of Le Matin Patisserie, established in 2020 in Singapore. Meaning "the morning" in French, Le Matin reflects Matin’s deep appreciation for French-inspired patisserie, offering an ever-evolving menu of innovative pastries crafted from exceptional ingredients sourced from around the world.
Chef Matin’s culinary journey took shape in the kitchens of some of the world’s most renowned chefs. He honed his skills alongside Adriano Zumbo (Adriano Zumbo Patisserie), Christopher Thé (Black Star Pastry), Peter Gilmore (QUAY), Andre Chiang (Restaurant Andre), and René Redzepi (Noma). After spending two years as Pastry Sous Chef at the world-famous Noma in Copenhagen, Matin returned home to Singapore, driven by a passion to share his love for pastry.
“I don’t want to make anything fancy or trendy. That’s not my cup of tea,” Matin explains.
At just 31, he set out to create a pâtisserie of his own—one filled with the aroma of rustic croissants, galettes, and delicate Japanese-style mousse confections. His goal is simple yet profound: to return to the fundamentals of pastry-making, focusing on rich, heartwarming classics that evoke comfort and nostalgia.
Le Matin’s pastries consistently sell out, as locals eagerly embrace Chef Matin’s passion for creating soulful, timeless treats that beautifully capture the essence of fine patisserie.
In 2022, he was invited as a Guest Judge on MasterChef Singapore, where he introduced a challenge featuring his signature Chocolate Tall Cake. Le Matin Patisserie has also earned the highest accolade of 3 spoons in the prestigious Sweet Spot Guide, further solidifying its reputation for excellence.
In 2023, Matin was recognized as a Tatler Gen T. honouree—an award that celebrates the region’s brightest young leaders.
