With extensive expertise in hotel pastry, consultancy, and product development, he trains the next generation of professionals and co-owns the acclaimed online pastry shop 'Voilà' with his former teammate, Loi Ming Ai.

What an incredible three days at L’atelier! 🌟
We had the honour of hosting Pastry World Champion Otto Tay who shared his knowledge with our keen group of chefs.
This creative hands-on Masterclass highlighted Otto’s signature Moon Cakes, Gâteaux de Voyage and Mille-Feuilles. Using exotic ingredients, such as matcha, Yuzu or purple sweet potato, Otto brought with him a taste of Asia to our kitchen.
