Meet Otto Tay, the 2019 World Pastry Champion and a trailblazer in Asian pastry. With extensive expertise in hotel pastry, consultancy, and product development, he trains the next generation of professionals and co-owns the acclaimed online pastry shop 'Voilà' with his former teammate, Loi Ming Ai.

We had the honour of hosting Pastry World Champion Otto Tay who shared his knowledge with our keen group of chefs.
This creative hands-on Masterclass highlighted Otto’s signature Moon Cakes, Gâteaux de Voyage and Mille-Feuilles. Using exotic ingredients, such as matcha, Yuzu or purple sweet potato, Otto brought with him a taste of Asia to our kitchen.
