Our masterclass with Chef François Daubinet took professional chefs on a journey from concept to execution at L'Atelier Sydney. Working through around 12 original recipes, participants explored advanced techniques in mousse, glazes, inserts, and textural layering with every moment filled with the kind of detail that truly makes a difference.
Each day combined live demonstrations, hands-on practice, and in-depth discussions with Chef François, covering plated dessert composition, boutique and restaurant-style design, and practical tips for efficiency, stability, and innovation in professional production.
