Trained through the esteemed Compagnons du Devoir, François Daubinet’s journey spans some of the world’s most celebrated establishments, including Hôtel de Crillon, Plaza Athénée, and Le Taillevent.
As Creative Director of Fauchon Paris for nearly five years, he redefined modern French pastry infusing technical excellence with bold artistic expression.

Today, Chef Daubinet is an international consultant and entrepreneur, known for his signature balance of structure, flavour, and emotion. His latest collaboration with Elle & Vire Professionnel marks an exciting new chapter, blending French tradition with forward-thinking innovation.

Masterclass L'Atelier Sydney

OUR CLASS

Our masterclass with Chef François Daubinet took professional chefs on a journey from concept to execution at L'Atelier Sydney. Working through around 12 original recipes, participants explored advanced techniques in mousse, glazes, inserts, and textural layering with every moment filled with the kind of detail that truly makes a difference.

Each day combined live demonstrations, hands-on practice, and in-depth discussions with Chef François, covering plated dessert composition, boutique and restaurant-style design, and practical tips for efficiency, stability, and innovation in professional production.
