Alexis Bouillet, born and raised in France, began his culinary journey at the Hospitality Professional High School "Les Sorbets" in Vendée. His talent soon caught the eye of industry experts, leading him to further his education under the renowned Christophe Michalak at Plaza Athénée in Paris.
In 2011, Alexis showcased his skills at the WorldSkills Competition, earning the title of World Pastry Champion. He then refined his craft at the Four Seasons George V hotel in Paris and later collaborated with Frank Haasnoot at the Mandarin Oriental in Taipei, Taiwan.
Chosen by Yannick Alleno, Alexis led the pastry operations at Taipei 101's STAY Taipei restaurant and Sweet Tea tearoom. He then transitioned into an international Pastry Consultant role, sharing his expertise through training sessions and masterclasses worldwide.
Eager to share his knowledge and passion, in September 2021, Alexis co-founded "Twins' Creative Lab" in Taiwan with his twin brother Manuel, focusing on pastry research, development, and online content creation, pushing the boundaries of pastry artistry.
